The schmucks who "edited" (and expurgated) the compilation we know as the bible were trying to appeal to greek and roman interests, so that these latter could pretend to be most god-like in appearances.
Seriously though, I imagine no one thought of mentioning it because when it was written no one had any reason to figure white folks would come along and expropriate the entire religion and monopolize the idolization of its messiah. Who'd have thunk that people would be stupid enough to try and make others believe god and jesus were white guys? Who'd have thunk it would work as well as it did?
