     1   MS. STEEL:  Where it says "sheep line"?
     2        A.  Where it says "sheep line", but to the left of that
     3        behind the head removal area, behind the horn cutter.

     6        A.  The trollies were kept there.  As the dirty material
     7        from the carcass was removed, the front feet, the back
     8        feet, the tails, occasionally, the scrotum of the male
     9        animals, the horns, were removed.  They were put in these
    10        trollies and these trollies were moved back and forwards
    11        between the outside through the hides and skins room,
    12        between this area and this would be considered in my -----

    15        A.  It is in the wall of the hides and skins room.

    17   Q.   Can you hold your plan up and point with your finger so

    19        A.  Right here. (Indicating).

    30   Q.   The trollies went from south, just south of the head wash,
    31        horn cutter?
    32        A.  Yes.

    34   Q.   Yes, and they were pushed across the line?
    35        A.  They were pushed across the line between the legging
    36        platform and dehiding, through that door, outside and then
    37        new trollies outside were brought in.  These trollies were
    38        not cleaned in between.

    40   Q.   They were wheeled in and out?
    41        A.  Yes.

    43   Q.   What is the concern about that?
    44        A.  This is, obviously, in my professional opinion, very
    45        unacceptable practice.  You usually do not push any dirty
    46        material across a line either.  At this point, the carcass
    47        has been partly dressed already and meat has been exposed.
    48        So, after this point, you would not cross anything across
    49        the line.  That is an accepted practice.  The risk,
    50        obviously being that the trollies might touch the 
    51        carcasses.

    53        The people who pushed the trollies are obviously dirty
    54        hands.  They occasionally tend to push the carcasses aside
    55        with their hands because they want to get the trolley
    56        through, they want to get through themselves.  There is a
    57        high risk of contamination there from very dirty material,
    58        the animals feet in particular, then to be covered in
    59        faeces and faecal material.
