Day 098 - 07 Mar 95 - Page 33

deboning is going to take a huge amount, is it, of weight
       off the cow anyway?
       A. Yes, I am guessing at the 30 per cent.

  Q. OK, it does not matter. So, for two out of five days
McKeys would take of every dairy cow that came into your
plant some percentage of those cattle that would be coming
       in on those days, basically?
       A. Yes.

  Q. When you buy dairy cattle, do your buyers have different
specifications for different days: "If we buy cattle on
this day, we have to buy this kind of dairy" -- we are
       talking about dairy ---
       A. Yes.

  Q. -- or do they generally get the same kind of things that
Tesco's or everyone else would get?
       A. There is a big difference between what we call
"manufacturing meat" and what we would call "best beef",
       if you like.

  Q. The best beef is the better quality, is it?
       A. Yes. Sorry, what was the question?

  Q. So the manufacturing quality is the McDonald's, the McKeys?
       A. Yes. So your questions was do they buy?

  Q. Would you buy any other manufacturing quality beef on other
       days?
       A. Yes. I mean, it is largely governed by the market for
       the hindquarter.

MR. JUSTICE BELL: Yes. You do buy it because you buy the
       animal?
       A. Yes.

  Q. And that will have some cuts on it which are manufacturing
       meat?
       A. Yes.

  Q. Quite regardless of the quality of the animal?
       A. What you are asking is, do we buy dairy cows every day
       of the week.

  MR. MORRIS: Do you?
       A. Yes, to my knowledge.

  Q. You do not say: "Oh, if we get them on these days we have
to buy this type of dairy cow, as opposed to this day when
we have to get a different kind of dairy cow". When you
buy dairy cows, do you have a standard basic dairy cow?
       A. No, there are specifications with regard to the
confirmation factor of animals that our buyers buy to.

  Q. All I am saying is when you buy dairy cows that go to
McKeys, is there any difference in the original live cattle
that you buy, is there any difference between the stuff
        -----
       A. They would not be specifically buying those cattle for
