1 MR. JUSTICE BELL: We heard evidence that the English supplier
2 of beef patties for McDonald's takes only certain specific
3 cuts. Is that the same in the States or not?
4 A. No. Usually, in Europe, especially in countries like
5 Germany and in the UK, we have a limited number of cuts
6 that we can use. But our specifications, our global
7 specifications, do not specify a specific cut. We only
8 specify that it is the muscle meats and there is several
9 specifications that we do not use mature bulls, for
10 instance, we do not use offals, we do not use organ meat,
11 things of that nature, or additives.

13 MR. MORRIS: Mr. Bowes from McDonald's main pig supplier,
14 I think it was him, who gave evidence here, said that ---

16 MR. JUSTICE BELL: This is UK?

18 MR. MORRIS: -- UK, sorry -- said that it was either one in
19 eight or one in 12 -- maybe someone can remember -- that
20 they calculated that for all the pigs killed in this
21 country McDonald's took meat from about one out of every
22 eight pigs. Is that everyone's recollection? It might
23 have been one in 12, but something between one in eight and
24 one in 12 pigs. Have you ever calculated what percentage
25 of actual pigs -- for example, pigs -- reared in the States
26 McDonald's would get some portion?
27 A. No, I have not calculated that.

29 Q. Have you done that calculation with cows or with steers and
30 cows, cattle?
31 A. Yes, I have. I have, if I remember from the last
32 numbers, it was roughly (and this is one of the things that
33 I have to tell you before I give you the number), there are
34 different types of animals that are in the beef industry.
35 We use primarily lean beef which is a different segment.
36 We use very little of the grain fed animal. That primarily
37 goes to the primal cuts; that primarily goes for export
38 too. But, in general, over the available lean meat we use
39 about 15, around 15 per cent.

41 Q. Of the lean beef supplies?
42 A. Right.

44 Q. Does that mean 50 per cent of the total volume?
45 A. 15.

48 meat or 15 per cent of every cow or steer raised by you?

51 cent represents.
52 A. 15 per cent of the available lean meat, that is,
53 boneless, it is after you take out the weight of the
54 carcass of the live animal -----

57 in the US; that is what we need to know.
