interest that she has looked into this in great detail or
anything like that?
A. Mrs. Crawford is part of the Senior Quality Assurance
team for Europe. I believe there are four people on that
team. She is a member of that team and she has a wealth of
experience in all aspects of quality assurance, including
animal welfare at our suppliers both in the UK and through
her European colleagues also in Europe.

Q. Does she have any experience of treatment of the animals
other than from the visits that she has made?
A. No, not that I know of anyway.

Q. Is that the same for the other people who make visits?
A. Yes. Yes, essentially, the people working in the
quality assurance are generalists. They deal with many
products and they deal with many aspects of those
products. They are not experts in any one particular field
but they have knowledge of almost all of those fields.

Q. A basic knowledge based on their -----
A. Work experience.

Q. Which is just a small part of their total job in the
Quality Assurance Department?
A. They are generalists; they are not experts.

MR. MORRIS: May it be possible to have a five-minute break?

MR. JUSTICE BELL: Yes.

(Short Adjournment)

MR. MORRIS: Which countries in Europe does McDonald's buy beef
from in the UK apart from, obviously, UK beef?
A. It is, obviously, the UK and Ireland and then it will
vary; it is occasionally France; it could be any one of the
EU countries but, generally, it is not. It is UK and
Ireland is the vast majority and occasionally from France.
That has been the most recent practice.

Q. But, I mean, the other countries in Europe have -- well,
all of them from time to time?
A. No, not all of them, not by any means.

Q. Which ones?
A. You will have to ask Mr. Walker specifically. From my
memory, he has bought some beef in Denmark; he has bought
some in Germany and he buys beef in Holland to supply back
to Holland.

Q. Yes, that is true.
A. And then France.

Q. What is McDonald's policy on the buying of beef? Yes, what
is their policy on the sources of beef?
A. In Europe? You are talking Europe, UK?

Q. It could be generally but as applies to the UK.
A. Generally, as it applies to the UK, the policy is to
