2 Q. Do you get somewhere round B grades?
3 A. We have got grades from A through to F, but our average
4 grade would be, say, C plus, B minus.

6 Q. OK. If C is average you are slightly above, if C is
7 average -----

12 MR. MORRIS: When you were talking about your grades, when it
13 comes down to personnel practices, that would apply, would
14 it, that you would tend to get C plus, B minus, round
15 there, on average?
16 A. We have, I would say, that since I have been in the
17 restaurant we have had personnel grades which range between
18 A and F. There have been times when we have received a
19 grade of F which we have done something about. There have
20 been times when we have received a grade of B and A. What
21 an average grade is, I could not actually tell you because
22 I do not know the sum total of the grades.

24 Q. What you said generally about the store as a whole would
25 apply to personnel matters, would it? What I am saying is,
26 you did not have fantastic personnel grades compared to
27 others or you did not lousy personnel grades compared to
28 others?
29 A. I do not know. Having never worked in another store
30 for a lengthy period of time, I do not know what their
31 grades would be like.

33 Q. No. I mean compared to the overall grade that your store
34 got, was personnel matters generally ------
35 A. I would say it was about average. Again there were
36 times when on other criteria, for instance, quality,
37 service and cleanliness, we got grades between A and
38 between E and F. Each time we got a low grade we formed an
39 actual plan and acted accordingly.

41 Q. What do you get a personnel grade F for then?
42 A. I cannot remember. I cannot even remember that
43 specific personnel audit. I mean, it must have been at
44 least a year ago.

46 Q. In terms of food integrity, cooking of food in terms of
47 safety, using out of date products, or anything like that,
48 which may be reflected in grades, were your grades, again
49 compared to the rest of the grades your store got in the
50 same -- what I am saying is was your store particularly bad
51 at food integrity or particularly good or just -----
52 A. There is not any specific integrity test or audit which
53 specifically covers salads, for instance. There is a meat
54 integrity evaluation programme, and on that I know that we
55 scored an above average grade.

57 Q. Above average?
58 A. I know for a fact that we did score an above average
59 grade for that, and that was completed six to 12 months
60 ago.
