2 A. Certainly not, sir, no.

4 MS. STEEL: I thought you said you wanted to ask about shakes?

6 MR. JUSTICE BELL: No. Well, you dealt with shakes as well?
7 A. I believe so.

9 Q. Ketchup, mustard. Shake mix, what about that?
10 A. Shake mix was delivered in four gallon containers
11 inside like a polythene bag, and when you entered -- you
12 basically took the bag and poured it into the back of a
13 reservoir at the back of the shake machine, and then that
14 obviously was taken up through the shake machine and came
15 out at the dispensers, frozen or semi-frozen.

17 MR. JUSTICE BELL: All I was doing was making sure that there
18 was no question of water being mixed with them as part of
19 the ordinary, proper way of preparing them before they were
20 dispensed. Do you understand?

22 MS. STEEL: Yes. (To the witness): So then you have the syrup
23 in the tanks, or whatever, in the machine -- I do not know
24 how it works -- but at what point does it get mixed with
25 the milk and the ice?
26 A. Right. It is drawn up through two tubes at the back
27 from the reservoir, into a chamber. The chambers have sort
28 of got an ice build up at the side, and there are beater
29 blades which scrape the ice off the side into the shake
30 mix, to give the consistency of the thick shake. Then at
31 the point of the tubes that come out from the canisters
32 where the syrup is, and it is mixed at the point where they
33 come out of the nozzles at the front of the machine.

36 A. So just before they go into the cup.

38 Q. These are targets for the amount of ketchup used. There
39 was also a target for the number of portions of chips sold
40 per kilo of fries used?
41 A. There was a fry yield, yes.

43 Q. Do you remember what that was?
44 A. No. I believe it was -- this has changed since that
45 time -- but I believe at the time it was 920 to 960 regular
46 servings of fries per 100 kilograms of potatoes.

49 A. It has dropped now. It is now 840 to 880, I believe.

51 Q. Was there also a target yield for the amount of lettuce and
52 cheese that was used?
53 A. Yes. I do not think we specifically had a target yield
54 -- there was not a yield as such for cheese but, you know,
55 if we did a cheeseburger, that was one piece of cheese on
56 it, so they did not specify a yield for that. But lettuce,
57 yes, definitely.
