     4        are targets for the amount of milkshakes sold per gallon of
     5        the shake mix used?
     6        A.  Yes.

     8   MR. RAMPTON:   I am sorry, I do not want to be annoying, but
     9        I thought your Lordship had said that if these
    10        allegations  -----

    12   MR. JUSTICE BELL:  Yes.  I did not say it had to be put in this
    13        instant.  I would have preferred if it was put
    14        straightaway, and that if there is any detail or colour or
    15        further instructions in relation to it, they should be put
    16        too, especially it is suggested, for instance, that any one
    17        at the restaurant had any conversation with Mr. Davis about
    18        it.  But it is up to you when you put it.  You must put it
    19        at some time.

    21   MS. STEEL:  To cut this short, I think it would help if
    22        Mr. Rampton thought before he opened his mouth and paused
    23        to hear what I was going to say.

    25   MR. JUSTICE BELL:  It is up to them, Mr. Rampton.

    28        and how they do it, but all I was going to say was that
    29        unless it is put I shall treat it as having been abandoned.

    38        A.  That is right.

    40   Q.   It is also true for the amount of burgers sold per box of
    41        burgers used?
    42        A.  I do not think there was a specific yield for the
    43        number of meat package per -- it was not -- it was obvious,
    44        you know, one hamburger had one meat patty in it and a
    45        BigMac had two meat patties in it.

    47   Q.   I mean, you document everything that is thrown away behind
    48        the counter ---
    49        A.  Certainly, yes.

    51   Q.   -- that has been held for too long, or something like that? 
    52          It is not just, kind of:  "Oh, we do not need to worry 
    53        about how much is being thrown away"?
    54        A.  No, you would try to control it, yes.

    56   Q.   There would be some kind of target; like if you only
    57        managed to get 10 burgers out of a box, you would start to
    58        get worried?
    59        A.  You would be extremely worried if you only get 10 out
    60        of 300, yes.
