most of the industries because, of course, they have to
       specify their processes so carefully.

  Q. Can you name some industries that have a low risk by the
very nature of that kind of industry?
       A. Well, anything which is essentially a high
administration rate, or retailing generally; I mean, if you
are just selling various bits and pieces.

MR. JUSTICE BELL: Can we not imagine them for ourselves?
I would have thought banking would ---
       A. Absolutely.

  Q. -- obviously be low risk, because that is largely what
I will describe as "clerical", although that may not be
       doing it justice.
       A. I would think that is likely, right, my Lord.

MR. JUSTICE BELL: Do you have to ask Mr. Purslow? If you have
something specifically in mind, a specific target for
       comparison.

  MR. MORRIS: Yes.

MR. JUSTICE BELL: I think that is why, I would guess, he chose
food manufacturing, because it is what, for right or wrong,
Mr. Purslow thinks is a comparable. You have made your
point about full-time work. If there is something else --
you see, I thought you might want to ask: There is a lot
of machinery which you might trap your fingers in, or
things like that, in food manufacturing, which there is not
       at McDonald's.

  THE WITNESS: Indeed.

MR. JUSTICE BELL: If you have points like that, then put them
to him. I am interested in something which is a reasonable
comparison, because catering is here to stay and ---

MR. MORRIS: If we compare it to retailing.

MR. JUSTICE BELL: -- it is not comparable to something like
       banking at all.

  THE WITNESS: No, absolutely.

MR. MORRIS: If we compare McDonald's to retailing, for
       example -----

MR. RAMPTON: My Lord, I must intervene. Why should McDonald's
be compared with retailing? It is a kind of retailing. We
cannot live by eating fairy toys and postage stamps. We
       have to eat.

MS. STEEL: Mr. Nicholson compared the wage rates in the
retailing industry to the rates of pay at McDonald's.

MR. JUSTICE BELL: I can see reason for the comparison there
but, when we come to accidents, I cannot.
