     1        of work is obviously conducted by myself.  But if one of my
     2        companies asks me to do something and I am not available,
     3        I will put one of my associates in to do the work for me.

     5   Q.   So your clients include the Dorchester, The Ritz, Copthorne
     6        Hotels, Metropol Hotels, Travellers Fair, Northern Foods
     7        and Mars International?
     8        A.  No longer The Ritz.

    10   Q.   At one time, it was?
    11        A.  Yes, indeed.  That is as of the last six months,
    12        because the management of The Ritz has changed; it has been
    13        taken over by another company who retain their own
    14        consultant.

    16   Q.   Obviously, that is a lot of work if you are doing work for
    17        them on a weekly basis; or is it just they have particular
    18        jobs for you from time to time?
    19        A.  Well, both.  For instance, if I am talking about hotel
    20        inspections, hotels will ask me to come and inspect maybe
    21        once a quarter, so I will do a complete inspection of the
    22        hotel four times a year.  So, although it is a very nice
    23        contract and they will come back to me, it may only be four
    24        days' work a year.  It also means, of course, that they
    25        will turn to me if they want any extra input over and above
    26        that.

    28   Q.   Northern Foods -- did they not used to be, or is that now a
    29        supplier of McDonald's?
    30        A.  Not that I am aware.

    32   Q.   I might have that wrong.  I am not sure.

    34   MR. JUSTICE BELL:  Are they the people who own a lot of
    35        concessions -----
    36        A.  Indeed, my Lord.  Northern Foods, in fact, have
    37        something like 54 factories nationwide and they have a
    38        whole range of branded products, including things like Pork
    39        Farms Pies, Express Dairies, and so on and so forth.  It
    40        may possibly be they supply McDonald's, but I am not aware
    41        of it.

    43   MR. MORRIS:  I understand that Northern Foods is or has been a
    44        supplier to McDonald's.
    45        A.  Possibly so.  I just advise them on health and safety.
    46        I would not know their particular profile, in any case, in
    47        the marketplace.

    49   Q.   So the kind of work you do with those companies is similar
    50        to the kind of work you do with McDonald's? 
    51        A.  Certainly, my Northern Foods work has been very 
    52        similar, because I have been involved in the gradual 
    53        establishment of the safety culture over a period of years
    54        and I have worked closely with their safety department.
    55        I sit on a small steering committee with their technical
    56        director and their safety adviser, and so on.

    58   Q.   But in terms of all the ones I have mentioned, the
    59        Dorchester, Copthorne Hotel, Travellers Fair and Mars
    60        International, we are talking about the same kind of work
