Day 131 - 06 Jun 95 - Page 30
A. Yes, indeed.

Q. In doing this exercise, Mr. Purslow, we are going to be
astute to obey his Lordship's injunction not to trespass on
his Lordship's (inaudible) to argue the case.

MR. JUSTICE BELL: That is 253 of the bundle.

MR. RAMPTON: Thank you.

(To the witness) The first one I ask you about is
Joanne Bishop, who had a burn or scald and was told to run
her hand under the tap. This is a recurrent theme; it is
said sometimes: "Oh, I was told to put my hand under the
tap and there was no cream for the burn." What is the
correct procedure when somebody burns themselves?
A. To immerse their hand in cold running water, ideally,
and to keep it there for maybe 10 or 15 minutes, so that
the heat energy is taken out of the burn.

Q. What, if anything, is burn cream and what function does it
perform, if any?
A. Once upon a time, burn cream would have been sold as a
minor salve, but, in actual fact, modern first aid teaching
is that you should not apply anything to a burn; in actual
fact, you should try and take the heat energy from it. You
can obviously treat the burn later, but the intent is to
put it in cold water. So the advice was entirely correct.

Q. On the next page, this is a comment on a statement from
DS Townsend, a comment about the words in quotes, "air
condition". What is the nature of air supply in a
McDonald's restaurant?
A. It is not air-conditioned as such, because
air-conditioned means that it has been cooled and
humidified. But there is a balanced air system, which
means that fresh air is drawn in from a specific point
outside the restaurant, and that is balanced with the rate
of extraction above the grills, so that you get a positive
flow of fresh air into the kitchen area. That is the
intent of all the design.

Q. You write here that the highest temperature you have ever
taken in a kitchen was an air temperature of 39 degrees
Centigrade?
A. Yes.

Q. Was that a McDonald's restaurant?
A. No.

Q. What sort of a place was that?
A. It was a basement kitchen of a very famous hotel. It
was like working in a sauna bath.

Q. You write elsewhere, I think, that the minimum temperature
in a kitchen such as one finds at McDonald's is 16 degrees
Centigrade; is that right?
A. I think it is 16. It might be 16.8. It was originally
part of the Offices, Shops and Railway Premises Act; and
that is the minimum temperature after the first hour of
