     1   Q.   So once you get your first star, does your pay rise become
     2        greater because you have a star?
     3        A.  Not necessarily.  It is an indication that you have
     4        achieved something, and you almost certainly at your next
     5        review will be remunerated for it.

     7   Q.   The noise during certain times, is that something that is
     8        fairly typical -- the noise -- when there is a lot of
     9        activity going on?
    10        A.  I think it is probably typical of that restaurant, but
    11        you do not realise it when you are in the restaurant
    12        because you are in amongst the noise.  You do not hear half
    13        of that.  Everybody is concentrating upon someone else.
    14        Everybody is working in a team.  The people who are
    15        actually preparing the food are listening to the person
    16        round the corner.  The person round the corner is shouting;
    17        he is shouting how much cheese he wants on the hamburgers
    18        that are being cooked, that kind of thing.  There is a fair
    19        bit of shouting going on.  There are all the bleepers.  It
    20        takes you sometime to recognise which one is different.

    22        There are different sounds for friers.  There is a
    23        different sound for the grills.  There is a different sound
    24        for the toaster.  So there are all those noises going on.
    25        When you are inside the restaurant, you did not hear it as
    26        we heard it there.

    28   Q.   You get used to it?
    29        A.   I do not know that it is a case of getting used to it;
    30        you are just all part of it.  It is part of the scene.

    32   Q.   Talking about the noise and the shouting, somebody said
    33        something about adrenalin, one of the managers, I think,
    34        said something about helps to create excitement, adrenalin.

    36   MR. JUSTICE BELL:  He said it helps get the adrenalin going and
    37        then people want to work it off?
    38        A.  Yes.  I think that is probably right.  They are quite
    39        exciting places to be.  But my experience of them is, of
    40        course, limited.  I have not often worked in a restaurant.
    41        I go back one day a year to work as a crew person in a
    42        restaurant -- everybody does -- so my knowledge of it is
    43        fairly limited.

    45   MR. MORRIS:  In those stores there was a preponderance of
    46        managerial staff with some kind of military or police
    47        background.  I cannot remember whether it was police.
    48        Presumably, military -----

    50   MR. JUSTICE BELL:  It was naval, then he said Merchant Navy; is 
    51        that what you were thinking of?

    57   MR. RAMPTON:  Mr. Morris said "those stores".  In fact, it was
    58        related, I think, to Croydon.
