     9        problem is, when they were made and who by.

    12        you want the originals, you must say, quite regardless of
    13        any other argument you have in due course as to
    14        admissibility or the weight I attach, if any, to these
    15        documents.  If you want an original, you must say so at any
    16        stage.

    19        not allowed to ask witnesses about from residents in
    20        Kings Road.  They were deemed:  "Well, we have no evidence
    21        that they are authentic documents".

    26        preface this first with a question, if I may:  I think you
    27        told us -- I hope I have it right -- that your concern
    28        about the deboning room was this, that you were worried
    29        that the temperatures in the octibins after deboning might
    30        be too high?
    31        A.  That is right.

    33   Q.   Did you measure temperatures in the octibins before -----
    34        A.  No, I did not.  At the time I did not have an
    35        instrument that would have been necessary for it.

    37   Q.   I just want to know whether you measured them or not.
    38        A.  I could not measure because the instrument that I
    39        had for measuring carcass temperatures, it has a probe
    40        about this length, about 30 centimetres.  You can get to
    41        the deepest joints in the carcasses and it is designed for
    42        measuring temperatures in the carcasses.  In an octibin it
    43        would be a totally useless instrument for measuring
    44        temperatures.  So, I was in the process of acquiring a
    45        better instrument for measuring the temperatures.

    47   Q.   Just turn to page 104 -- sorry, that is a wrong reference;
    48        I would like to get one for while you were there, but in
    49        fact there are two -- 102 and 103.  I am sorry, they are in
    50        reverse date order, but do not worry about that.
