  Q. How often did you measure it?
       A. I measured twice a day usually. I could not possibly
do it more often, even though under the circumstances
I would have wanted to do it, but I had so many other
duties that I could not do it more.

  Q. Would you then, please, lay hands on, if you will, the
       Jarrett file?
       A. Is this the Jarrett file I have here?

  Q. No, that is not.

MR. JUSTICE BELL: No, it is the thin file which you had
       yesterday.

MR. RAMPTON: Please turn to page 12. 12 is -- I do not know
quite where marked on the document, bottom left-hand
corner; that is in the middle -- a sheet headed "Alec
Jarrett Limited On Line Half-hourly Q.C. Checks Boning
       Rooms"?
       A. That is right.

  Q. The date on it is 28th February 1994, is it not?
       A. Yes.

  Q. Do you see the third column? The first column is "Time",
       second column is "Product"?
       A. Yes.

  Q. Then you see the "Temperature", do you not?
       A. Yes.

  Q. Just look at those temperatures, will you? Then please
turn over the page; you will see it takes it through to
       3.30 in the afternoon?
       A. Yes.

  Q. Then when you have done that, please turn to page 18, the
same category of document. "On line half hourly quality
control checks, Boning room". This means, does it not, Ms.
Hovi, that these are checks done while the meat is being
       boned, does it not?
       A. I should think so.

  Q. You should think so. Did you not see any of these
       documents while you were there?
       A. No.

  Q. Look at the times, the product and the temperature column.
Look at the temperatures recorded or, apparently, recorded
       at pages 18 and 19?
       A. Yes.

  Q. That is just before you arrive, that is, 28th March. Then,
if you will, turn please to page 23, same category of
document, this time for 29th April which is the last day
you were there, two pages, 23 and 24. Please again look at
the temperatures. This takes us through to 4 o'clock in
the afternoon but starting at 6.30 in the morning. Have
