40 stage I would like a copy I can actually read which you
41 must then remind me to put at the back of tab 17.

44 photocopied, it is only a couple of relevant words that
45 have been blanked out. Most of them are readable and it
46 may be helpful if you did have a copy.

48 (To the witness) If we go to the chart, what is the
49 relevant part of have chart that is concerned with
50 pathogens in red meat or food-borne disease, food-borne
51 pathogenic organisms or whatever?
52 A. Well, the pathogens in this list are the ones starting
53 with Bacillus cereus and ending with Penicillium between
54 the first group basically.

57 A. Yes. I would like to point out these are pathogenic
58 organisms causing food poisoning; this does not include the
59 pathogens that cause food-borne disease in humans. That is
60 why, for example, listeria and campylobacter are left out
