4 A. Well, the 60 samples that I am talking about in that
5 context with the microbiological -- sorry, the meat
6 samples. We are in a bit of a transition with the others
7 at the moment because of the HACCP system, so .....

9 Q. You said before about a minor failure in procedure would be
10 something like not sterilizing a knife and using it again,
11 you said that?
12 A. Depending on -- yes, depending on other factors.

14 MR. JUSTICE BELL: Depending on?
15 A. If the knife was, sort of, visibly clean anyway, sir,
16 and the chap did not sterilize it, it would be a different
17 case to if it was filthy and he did not sterilize it.

20 intend to do that this afternoon. We have nearly finished.
