     2   MR. MORRIS:  That is what I was thinking, that to test for all
     3        different tests, I mean, some parts of the meat may be more
     4        affected by Salmonella than they would be by E.coli and the
     5        TVC counts may be different in different parts, for
     6        example, on the skin as opposed to ---
     7        A.  Inside.

     9   Q.   -- or whatever.  So, when you take a sample, what part do
    10        you generally take?
    11        A.  It could be anywhere depending on what we are producing
    12        at the time, what meat we are producing at the time.  It
    13        could be anywhere; all over it, basically, on a daily
    14        basis.

    16   MR. JUSTICE BELL:  As I understand it, you are not doing a test
    17        on every carcass?
    18        A.  No.

    20   Q.   Let alone taking a piece of meat from five sites on every
    21        carcass?
    22        A.  Not at the moment, no.

    24   Q.   Every so often you take a piece of meat from a carcass?
    25        A.  It is a little difficult because if we are producing
    26        certain cuts of joints of meat as we do every day, we will
    27        take a sample of this joint, a sample of this joint, a
    28        sample of this joint, as sample of this joint, not
    29        necessarily all off the same carcass, but of all the
    30        different joints that make up or many of the different
    31        joints that make up that carcass.  Do you see what I mean?

    33   Q.   Yes, but give me an idea of the cut you might take a
    34        sample?
    35        A.  OK.  We may take a sample of sirloin, a sample of
    36        topside.

    38   Q.   Stop there, but you would take a sample of sirloin at some
    39        time during the day?
    40        A.  Yes.

    42   Q.   For all, I know a number of times during the day, or would
    43        it only be one sample of sirloin?
    44        A.  Again it would really depend on the testing regime that
    45        day and what they are testing for.

    47   Q.   Right.  Very well.  You would take a sample from another
    48        kind of cut?
    49        A.  Yes.

    55        every individual animal?
    56        A.  No.
