    22        "dehiding" area is one of the critical points in the whole
    23        process in terms of contamination, yes?  How high up is the
    24        line above, or how does the line work in terms of the
    25        workers that are working on dehiding?  Are the carcasses
    26        level with them, just turns up in front of them?
    27        A.  Actually, the people doing the dehiding are on a kind
    28        of up and down platform so that they can start the dehiding
    29        at the top of the back legs, effectively, of the carcass,
    30        and then this moves down whilst they are dehiding.

    32   Q.   So the line is above a certain height, people can move
    33        underneath the line if they wanted to?
    34        A.  Yes, I mean -----

    36   MR. JUSTICE BELL:  The front hooves of the animal, how far are
    37        they above the ground?
    38        A.  Depending on the size of the animal, two or three feet,
    39        four feet maybe.

    46        material, the head or something, under the line if you need
    47        to to take it somewhere.  It is possible to cross the line

    51        A.  Yes, it is possible.  It is not, you know, it is not 
    52        really allowed, obviously, for safety reasons but there are 
    53        certain points where you can cross the line, yes.
