Day 094 - 01 Mar 95 - Page 08

yes. Does the situation get worse -- that does not mean
       that.

MR. JUSTICE BELL: You see, one of the problems, Mr. Morris,
with this is there are so many possibilities. If one looks
at the scheme of it, it seems to, at least 02A and O2B,
advance in time. It may be, because I do not know what
"trained employees" means -- please listen to me.

  MR. MORRIS: Sorry, yes.

MR. JUSTICE BELL: I do not know what "trained employees"
means. "Equipment disassembly", one can envisage what that
might mean. On the construction of the document you would
urge upon me it has pretty poor marks. But after that we
get some "pre-op swabs" and then we get "facility
sanitation". Then we get things like "surface germicide",
"mid-shift clean" and "equipment swabs". For all I know,
some of those refer to cleaning the equipment after it has
       been disassembled.

  MR. MORRIS: Yes.

MR. JUSTICE BELL: So, for all I know again, even if you get 80
or 90 per cent noncompliance on equipment disassembly, if
you get no comments at all on your pre-op swabs, you get
some on your facility sanitation, but you get no comments
on your surface germicide and you get no comment on your
equipment swabs and equipment swabs again, this may mean
that what might appear to be a poor mark on equipment
disassembly has just faded into insignificance. For all
I know, US DA has a software programme which eliminates, or
virtually eliminates, equipment disassembly provided you do
well on your pre-op swabs. But the fact is I just do not
know -- do you understand the problem?

  MR. MORRIS: Yes.

MR. JUSTICE BELL: So by all means -- what I suggest is you do
not go through all the figures.

  MR. MORRIS: No.

MR. JUSTICE BELL: Get whatever you can from Dr. Gomez Gonzalez
about how the system works. If you want to talk to
Ms. Steel about something, do it now.

MR. MORRIS (To the witness): If we go to page 57?
       A. Yes.

  Q. "The receiving and control of incoming products materials",
       what is that?
       A. When the plants receive, just like I explained
yesterday, raw materials, in this case meat, that is what
       it means.

  Q. Right.
       A. But it will cover labelling, weight, temperatures, the
conditions and, obviously, and so obviously include
       sanitary conditions of the containers.
