     4        A.  In the USA, yes.

     6   Q.   What we are asking is this:  If the total volume of all the
     7        lean beef used in the USA is just, say, for example, a
     8        million tonnes, whatever it is, it does not matter, you
     9        would use 15 per cent of that total volume?
    10        A.  That is correct.

    12   Q.   So, in fact, you would use a greater percentage of actual
    13        individual cattle because you are only taking 40 per cent
    14        of the total carcass weight?
    15        A.  Yes, that is correct.

    17   Q.   Yes.  We can probably do those calculations ourselves.
    18        A.  I can tell you the number we probably use for our needs
    19         -- if we use, let us say, three million head of cattle,
    20        but from that three million head of cattle we only use 150
    21        to 200 maximum pounds of beef.  So, you take an animal that
    22        has, let us say, 1200 pounds weight or 1,000, anywhere from
    23        1,000 to 1200 pounds, from that animal we use roughly 150
    24        to 200 pounds for our product.

    26   MR. JUSTICE BELL:  Is that carcass weight or live weight?
    27        A.  Oh, that is the boneless meat.  The live weight is the
    28        1,000 to 1200 pounds.  That is live weight.  From that live
    29        weight -----

    32        A.  Total weight, weight of the animal.  From that animal,
    33        we take 150 to 200 pounds of meat for our needs, for the
    34        type of meat that we want, what we can use.

    37        million was an actual figure or just an example.
    38        A.  No, it is an actual figure.  That was for 1994.  Again
    39        we have -- it depends.

    42        it?
    43        A.  That is USA, yes.

    45   MR. MORRIS:  So whilst you use, you have said, 40 per cent of
    46        the deboned meat?
    47        A.  Yes.

    49   Q.   Or around that figure, for average, of a head of a
    50        particular cow or cattle or steer, or whatever, the figures 
    51        you gave about 150 to 200 pounds out of 1200 would indicate 
    52        something like 12 to 15 per cent of the total animal?

    56        that you use?
