Day 016 - 22 Jul 94 - Page 18

1 to be careful that if they are eating a diet high in fat,
sugar and sodium and low in fibre, that has been linked
2 with an increase risk of cancer and heart disease?
              A. Heart disease.
     3
         Q. Not cancer?
4 A. No, I do not think it has been established on cancer,
but what I would say -----
     5
MR. MORRIS: We did not say "established", we said "linked".
     6
MR. JUSTICE BELL: Let him finish the answer, then you can ask
     7 another question.
              A. My position on this is quite clear, that is, that if
8 one has a narrow range of products, you know, if one ate
eight or ten Big Macs a week, you limit your diet, you do
9 not have very much fresh fruit and vegetables in it,
whatever you choose, it has loads of fat, it has loads of
10 salt, then, quite frankly, I would expect they are going
to have health problems, whether it is heart disease or
11 whatever it is, some kind of mineral deficiency or some
kind of vitamin deficiency. I do not think there is any
12 disagreement between us on that. All I am saying, it is
not only products that are high in animal fat that may
13 lead to distortion in the diet. It is also products which
are strictly vegetarianism may also result in dietary
    14 problems.

15 MS. STEEL: How many studies have linked fat intake with
              cancer?
16 A. I am not sure what you mean by "link". I do not have
a clue what the answer is anyway.
    17
MR. JUSTICE BELL: I should not think anyone has.
    18
         MS. STEEL: More than 100?
    19
MR. JUSTICE BELL: It depends whether you have spotted them all
    20 or not.

21 MR. RAMPTON: Ms. Steel is giving evidence. He said he does
              not know how many studies.
    22
MS. STEEL: It is a question. More than 100, do you think?
23 A. I really do not know; in any case what one is
              concerned about ----
    24
MR. JUSTICE BELL: We must know what you mean by "link". At
25 the moment I am treating you as meaning, for the purposes
of the question, identified as a cause or a possible
    26 cause.

27 MS. STEEL: As a risk.

28 MR. RAMPTON: Which is it? It is very important.

29 MR. JUSTICE BELL: You must say what you mean so I can
              understand where we are going.
    30
MS. STEEL: In a comparable study ----
