All our crew are trained in all areas. That means they are more flexible. It's called rotation - it would be mind numbing to be stuck in the same area all the time !
Let me guess - you're one of those guys perfectly at home on grill, but put you on front and the arse falls out of it. How are you ever going to get good at it if you don't try it ? As far as I am concerned, kitchen is a wimp out - counter is where the real heat is. All the mo-mo's graduate towards the kitchen so they can avoid cusomer contact !
