7 A. With the males it was really a case of either you were
8 half way through doing the close and you would ask them to
9 stay on and help you complete it, or you were closing the
10 restaurant and did not want to lose people at that time, so
11 they were asked to stay on to help you finish the close.

15 continue up to 12?
16 A. Very rarely. There would have been cases where
17 possibly they would have volunteered to come back, but in
18 most cases females would have finished on time.

20 Q. How often would someone under 18 be working illegal hours?
21 A. I would imagine at least two or three, four times a
22 week, if not more. On most closes there would have been
23 someone scheduled to finish at 12 who would have been asked
24 possibly to stay on or work on past that time.

29 Q. I am just looking at your first statement. I might dodge
30 around a little bit because I am trying to go through this
31 the way it has been written. The case of a young woman
32 being injured, you said that she was not offered hush money
33 rather than compensation or something. Can you just
34 explain what happened in that circumstance?
35 A. If memory serves me correctly, the person involved was
36 due to go on holiday very shortly after the incident
37 happened and she had slipped and burnt her arm. At the
38 time because she had actually lost hours I believe she was
39 given a bonus payment. We actually gave her a bonus
40 payment. It was not so much a case of hush money; it was a
41 case of a bit compensation because she was going on holiday
42 and she had to keep her arm covered up at the time.
43 I cannot remember the amount. I remember the person's name
44 was Nicky Golding but I cannot remember the amounts that

57 obsession that the Company had. It was always something
58 that you were under pressure to keep down. It was
