the scheduling because we closed at 11 o'clock or 12
o'clock at weekends with the females there would have gone
       before the restaurant closed.

  Q. They would have gone before the pressure to stay on
       occurred?
       A. With the males it was really a case of either you were
half way through doing the close and you would ask them to
stay on and help you complete it, or you were closing the
restaurant and did not want to lose people at that time, so
they were asked to stay on to help you finish the close.
With the females the problem does not occur.

MR. MORRIS: Would the females always leave at 10 p.m. or
       continue up to 12?
       A. Very rarely. There would have been cases where
possibly they would have volunteered to come back, but in
most cases females would have finished on time.

  Q. How often would someone under 18 be working illegal hours?
       A. I would imagine at least two or three, four times a
week, if not more. On most closes there would have been
someone scheduled to finish at 12 who would have been asked
possibly to stay on or work on past that time.

  Q. Who was under 18?
       A. Who was under 18.

  Q. I am just looking at your first statement. I might dodge
around a little bit because I am trying to go through this
the way it has been written. The case of a young woman
being injured, you said that she was not offered hush money
rather than compensation or something. Can you just
explain what happened in that circumstance?
       A. If memory serves me correctly, the person involved was
due to go on holiday very shortly after the incident
happened and she had slipped and burnt her arm. At the
time because she had actually lost hours I believe she was
given a bonus payment. We actually gave her a bonus
payment. It was not so much a case of hush money; it was a
case of a bit compensation because she was going on holiday
and she had to keep her arm covered up at the time.
I cannot remember the amount. I remember the person's name
was Nicky Golding but I cannot remember the amounts that
were given. Sorry, Vicky Golding, not Nicky.

  Q. Can I move on to your third statement. I am going to ask
you some questions about it. I do not know whether you
have it in front of you? It is the one with questions and
       answers?
       A. Yes.

  Q. You said everybody above put pressure on management. Did
it depend on the personality or was it really everybody
       equally or what?
       A. I felt that labour percentage was the most biggest
obsession that the Company had. It was always something
that you were under pressure to keep down. It was
monitored on a daily basis. Basically, anyone from above
wanted you to keep the labour down. It was something that
