Day 168 - 03 Oct 95 - Page 12
Q. Food cost and -----
A. The training grade in the restaurant.

Q. Training grade?
A. Yes, I was responsible for training in the restaurant.

Q. Of all training the staff?
A. Well, I was not personally responsible for all
training, but I was responsible for ensuring that the
training grade reached a specific level and stayed at that
specific level. So I would organise -----

Q. Of the store as a whole?
A. Of the store as a whole, so I would organise training
squad meetings and ensure that people were buddied up with
the correct people.

Q. Whenever you were on shift you were generally in charge of
that shift in general anyway?
A. Not necessarily, no. The Manager of the day shift, for
instance, would do a 6.30/4.00 shift. The Manager of the
night shift would do a 4.00 close shift. If I was
scheduled a shift other than between those times, I would
just be a Manager for that day, say, for instance, if
I came in and Mike Logan was on a 6.30/4.00, he would
actually run the day shift. He would be the shift running
Manager.

Q. When you say 6.30/4.00, what does that mean?
A. 6.30 in the morning until 4.00 in the afternoon, so if
he was on that particular shift he would be the one
responsible for the -- he would be the shift running
Manager. He would be responsible for writing the floor
plan and assigning jobs to crew. I would just be one of
his Managers until 4 o'clock.

Q. But you would be in charge of the restaurant, in general?
You would be the most senior on when you were there?
A. I would be the most senior person, but it would not
actually be in my responsibilities. I could not be held
responsible for the performance reviews which Mike Logan
had set himself to write that day because it would be his
job as the shift running Manager for that day, for
instance, to give out those particular performance reviews
or to ensure that specific people were trained on specific
areas.

I would, for instance, be coming in at 11 o'clock in the
morning, doing 11.00 until 7.00.

Q. So, I suppose we could characterise it as the hands on work
done in the store in terms of relations with the staff and
organising the arrangements that were going on in the
operations, in general you were not involved in that or
directly responsible for that?
A. No. Whenever I was scheduled a 6.30 to 4.00 shift or
4.00 to close shift, I would be the shift running Manager,
and so I would take responsibility for running the shift.
As such, I would produce the lists to give to other
managers; I would delegate jobs to other Managers. One
