Day 152 - 11 Jul 95 - Page 07

       A. Yes.

  Q. What hours would they be working?
       A. Predominantly the evenings.

  Q. Every evening?
       A. No, sort of Friday, Saturdays and Sundays
       predominantly.

  Q. From what time, 6 o'clock, 7 o'clock?
       A. Gosh! I would have thought around about 6.00 or
7 o'clock till the restaurant shut. So probably about five
       hours.

  Q. You are talking about till the store shuts its doors to the
public, not to the actual close?
       A. No, until they shut the doors to the public. So
I think on Friday and Saturday it was probably around
       midnight then.

  Q. Then there was ---
       A. There was a maintenance man.

  Q. -- a maintenance man; what hours did he work?
       A. Probably a couple of hours a day.

  Q. Every day?
       A. I think during the week days. I do not think we had
him come in over the weekends. So at least four or five
       days in the week.

  Q. The Floor Managers: Would there be one Floor Manager on
       duty at all times?
       A. No; well, in terms of the part-time Floor Managers,
I think I can recall a couple of guys who were only
available outside of college, so they would only work
       Saturdays.

  Q. Did there always have to be a Floor Manager on duty or not?
       A. No.

  Q. There did not?
       A. I think I had two Seconds and two Firsts at the time.

  Q. Who were salaried?
       A. Who were salaried, sorry, yes. So there was not a
specific need, but the fact that I had probably six or so
Floor Managers -- six I can recollect by name probably --
on my payroll would mean that four of them were full-time.
I think it is highly unlikely that there would not be a
Floor Manager on the shift. I would certainly have a
salaried Manager running the shift with support in either
the kitchen or counter area from a Floor Manager.

  Q. The Floor Managers, would they not be included in the
       figures of opening up?
       A. Absolutely not, no. When I was a Manager doing or
asking the Manager to do the schedule, the idea was the
crew working the crew stations had to have my Floor
Managers in support roles. So, normally that would appear
