     2        simply in terms of time that I have put into the

     5   Q.   Pause there.  You get fees for the work that you do?
     6        A.  Absolutely.

     8   Q.   Therefore, it is not a constant figure.  On average, over
     9        last five years, roughly what percentage of your total fee
    10        income is derived from McDonald's?
    11        A.  About two and a half per cent.

    13   Q.   What has been your best McDonald's year?
    14        A.  I think it was nearly five per cent on one particular
    15        year, when I had a particular training input to McDonald's.

    17   Q.   What sort of work have you done for McDonald's over those
    18        five years?
    19        A.  Well, I have carried out a fair amount of training at
    20        all levels within McDonald's.

    22   Q.   Start at the bottom.  Have you trained crew members?
    23        A.  No, I have not trained crew members.

    25   Q.   Who have you trained?
    26        A.  I have trained supervisors, franchisees; and the senior
    27        management of McDonald's have all sat in on a day's course
    28        that I ran for them.

    30   Q.   What did you train them in?  Have you done food safety as
    31        well as health and safety?
    32        A.  No.  My input has been virtually exclusively health and
    33        safety.

    35   Q.   Over the whole range of the Company's business, or what has
    36        it been particularly?
    37        A.  Well, the particular input -- obviously, when I am
    38        training, I am talking about law, and so on and so forth --
    39        but I have particularly looked with Jill at their
    40        operations, and I have assisted them in the creation of
    41        their systems, covering such things as risk assessment and
    42        COSHH assessment, and so on and so forth.

    44   Q.   I am going to come to risk assessment specifically in a
    45        moment, Mr. Purslow.  Leaving aside the one occasion in
    46        1986, throughout the time that you have been advising
    47        McDonald's, have you known Jill Barnes?
    48        A.  Yes, I have.

    50   Q.   As you are probably aware, her post was a new one when she 
    51        was appointed in 1990? 
    52        A.  Indeed.

    54   Q.   Saving her blushes, can you, as a professional, tell me
    55        what you make of her attitudes and policies in the post
    56        that she holds in McDonald's?
    57        A.  I think she has been particularly effective and
    58        successful in the way that she has developed her role and
    59        brought it into the mainstream of McDonald's policies.
