Day 131 - 06 Jun 95 - Page 06
A. I did.

Q. Have you taught environmental health -- and, in particular,
we are concerned with health and safety at work -- to other
people?
A. Yes, indeed. I have lectured on health and safety
quite widely and, in particular, I contributed to the
ISH -- that is the Institute of Safety and Health --
diploma course, run by ROSPA, for probably 15 years taking
certain aspects of it.

Q. Have you delivered papers on this topic to international
bodies?
A. I have.

Q. Are you a past chairman of the Environmental Health
Commercial and Industrial Centre?
A. I am.

Q. Are you now a Fellow of that institute?
A. Yes. I was made a Fellow in 1988.

Q. As briefly as you can, but without skimping the essential
details, can you describe for us, please, the kind of
industries that you have, during the course of your long
career in environmental health, looked at as an
Environmental Health person?
A. Yes, indeed. Within industry, obviously, I spent 10
years in the food manufacturing industry, looking at all
aspects, and also food retailing, since Rank Hovis had many
shops, too. I then spent a period of time concentrating on
the hotel and catering industry. In my capacity as a
consultant, I still work widely in the hotel and catering
industry, and I am retained by some food manufacturing
companies too. But I have gained wide experience in
industry generally, and I have conducted safety audits on
many large national companies.

Q. When did you first come into contact with the Plaintiffs,
second Plaintiffs, in this case, McDonald's Restaurants
Limited?
A. The first -- and, forgive me, I am not quite sure of
the date -- but I was asked in about 1986 to look at a
specific task for McDonald's.

Q. Which was?
A. It was particularly to look at the cleaning of extract
ventilation systems, and so on. I did that as a one-off
task. I then became rather more involved when Jill Barnes
was appointed in 1990.

Q. I am going to ask you this. I want you to be certain that
I am not going to ask you for pounds, shillings and pence.
First of all, have you remained in a relationship with
McDonald's as a consultant since about 1990?
A. Yes.

Q. What percentage of your fee income is derived from your
work for McDonald's over the last five years, on average?
A. Well, it does vary a little bit, because I am not paid
