2 A. There is not always an award for the person who takes
3 the most money. I mean, the management come in and say
4 something like: "Tills 1 to 3 versus tills 3 to 6",
5 anything he wants. He says: "Right, the people that take
6 the most money, I will give them a bonus" of whatever he
7 wants. There is a great deal of discretion given to the
8 manager to reward his crew as an incentive.

10 Q. How often would that happen then?
11 A. I do not know. As I say, it is entirely up to the
12 manager.

14 Q. So some stores, it could be every Saturday and other stores
15 it might be once a month, once every two months?
16 A. Whenever the manager feels it is appropriate.

18 Q. Do staff have to ask before they have a drink?
19 A. Yes, because they have temporary breaks and they are
20 posted to a position in the restaurant so they have to be
21 relieved before they can get their breaks, so they have to
22 ask. There are a number of managers, especially in a
23 restaurant as busy as that, dotted all around. There is a
24 manager in charge of the kitchen; there might be a manager
25 in charge of the dressings; there would be a manager in
26 charge of the front counter; there would be a manager in
27 charge of the lobby side. If you want to drink, then you
28 go to that manager and say: "Do you mind if I have a
29 drink?" As long as they can be relieved, the manager will
30 -- no problem, and he will say: "Yes".

32 Q. So it is at the discretion of the managers?
33 A. Yes.

35 Q. If the store was very busy then they might well say: "No"?
36 A. Well, under certain circumstances I should imagine he
37 will. I mean, he will try to give everybody a short break
38 so that they will have a cold drink.

40 Q. But if staff are working in, you know, a fast moving
41 environment, hot, the heat from all the grills and just the
42 general kitchen, you know, kitchens are quite warm
43 generally, particularly when they are working fast, they
44 are likely to get thirsty, are they not?
45 A. Yes.

47 Q. But if it is busy they may not be allowed to have a drink?
48 A. Oh, I think it would generally be engineered amongst
49 the managers to get the crew rotated so that they can all
50 have a drink.

52 Q. Just one thing on the rap session: It struck me that some
53 of the crew members, when they did mention problems with
54 the payroll, the supervisor who was doing the rap session
55 did not really seem to ask them for more details about what
56 they saw the problem as?

59 Q. Is that typical?
60 A. No. All we can take is what they showed us. That was
