Day 119 - 02 May 95 - Page 20

as far as you are aware?
       A. There is not always an award for the person who takes
the most money. I mean, the management come in and say
something like: "Tills 1 to 3 versus tills 3 to 6",
anything he wants. He says: "Right, the people that take
the most money, I will give them a bonus" of whatever he
wants. There is a great deal of discretion given to the
manager to reward his crew as an incentive.

  Q. How often would that happen then?
       A. I do not know. As I say, it is entirely up to the
       manager.

  Q. So some stores, it could be every Saturday and other stores
it might be once a month, once every two months?
       A. Whenever the manager feels it is appropriate.

  Q. Do staff have to ask before they have a drink?
       A. Yes, because they have temporary breaks and they are
posted to a position in the restaurant so they have to be
relieved before they can get their breaks, so they have to
ask. There are a number of managers, especially in a
restaurant as busy as that, dotted all around. There is a
manager in charge of the kitchen; there might be a manager
in charge of the dressings; there would be a manager in
charge of the front counter; there would be a manager in
charge of the lobby side. If you want to drink, then you
go to that manager and say: "Do you mind if I have a
drink?" As long as they can be relieved, the manager will
-- no problem, and he will say: "Yes".

  Q. So it is at the discretion of the managers?
       A. Yes.

  Q. If the store was very busy then they might well say: "No"?
       A. Well, under certain circumstances I should imagine he
will. I mean, he will try to give everybody a short break
so that they will have a cold drink.

  Q. But if staff are working in, you know, a fast moving
environment, hot, the heat from all the grills and just the
general kitchen, you know, kitchens are quite warm
generally, particularly when they are working fast, they
are likely to get thirsty, are they not?
       A. Yes.

  Q. But if it is busy they may not be allowed to have a drink?
       A. Oh, I think it would generally be engineered amongst
the managers to get the crew rotated so that they can all
       have a drink.

  Q. Just one thing on the rap session: It struck me that some
of the crew members, when they did mention problems with
the payroll, the supervisor who was doing the rap session
did not really seem to ask them for more details about what
       they saw the problem as?
       A. Well -----

  Q. Is that typical?
       A. No. All we can take is what they showed us. That was
