1 You might be able to have more opportunity to put recycled
material in the middle of a thicker paper board container
2 versus the middle of a thin wrap.
3 Q. At the moment in the United States and since, what, 1990,
the hamburgers have been wrapped in paper?
4 A. When we made our switch, we announced our switch in
late 1990, and what we did, we switched to paper based
5 wraps.
6 Q. Paper based wraps. When was that switch complete?
A. We announced it November 1st 1990. We were completely
7 phased out by April of 1991.
8 Q. So far as that particular form of packaging is concerned.
Polystyrene foam is a thing of the past; is that right?
9 A. For us in the United States, yes.
10 Q. In the United States?
A. Yes. We use polystyrene foam for non-sandwich
11 packaging.
12 Q. While we are on the topic -- we are going a little bit out
of order, but it does not matter -- can you describe in
13 broad terms the composition of the present sandwich
wrapper that you say is paper based?
14 A. Do you mean, like, what it is made of?
15 Q. Yes, what is it made of?
A. OK. Although we have different paper based wraps, the
16 majority of our large sandwiches are made with
approximately 85 per cent paper and 15 per cent poly
17 ethylene.
18 Q. Where does the poly ethylene go?
A. The poly ethylene is in the middle. It is a three
19 layered structure with the middle layer being, we call it,
a quilted effect. It is quilted poly ethylene; it gives
20 it a little bit of cushion, a little bit of insulation, to
provide the properties that we are looking for in terms of
21 heat retention and moisture retention for the sandwich.
22 Q. So you use paper on the outside, poly ethylene with a
quilted effect in the middle and then paper again on the
23 inside?
A. Correct.

Q. Is the inside of the inside paper layer coated with
25 anything, the one that comes into contact with the food?
A. I do not believe so.

Q. Just a little bit more job description, if I may,
27 Mr. Langert: Do you have any responsibilities outside the
United States?
28 A. Yes, I do. My chief role is within the United States
to directly oversee our environmental programmes. My role
29 worldwide is to provide input information, co-ordination,
to be a central funnel for all the environmental
30 activities across McDonald's worldwide, and what that
