Day 111 - 30 Mar 95 - Page 09

Q. Did you take that expectation seriously when you worked at
the plant?
A. Yes, of course I did. I would take that even if such
expectations did not exist because that would be proper
professional conduct.

Q. Why were you dismissed?

MR. RAMPTON: Does it matter why she was dismissed, my Lord?

MS. STEEL: Yes.

MR. RAMPTON: Unless it has something to do with food safety?

MR. JUSTICE BELL: If I may say so, I am not going to stop you
answering that question, but there are limits to how
helpful it is to start at the back and then work towards
the beginning. If you are going to go into any of the body
of things, which is in paragraph 6 and paragraph 7,
although Ms. Hovi is your witness and you are entitled to
take her in the order you like, it would be much more
helpful to me if you went into anything further you want in
relation to the matters set out in paragraphs 6 and 7 and
then came to the circumstances of her dismissal.

MR. MORRIS: I just wanted to put, if you like, a whole stay at
the plant in some kind of context before going into the
details, if that is OK?

MR. JUSTICE BELL: I cannot see that it will throw you if you do
it the way I have suggested and then I can judge, since
Mr. Rampton has queried the relevance, on whether it is
relevant or not. It may very well be, but if we take it in
chronological order it will be that much easier for me to
see.

MR. MORRIS: Mr. Rampton, of course, has already brought that up
with his own witnesses on circumstances, so he can hardly
say it is not relevant.

MR. JUSTICE BELL: Let us see where we get to. If you elaborate
on 6 and 7, first of all.

MS. STEEL: Can I just add that Mr. Rampton has kind of rather
sneeringly remarked on a few occasions as well that Ms.
Hovi was only there for three weeks. He obviously seems to
think -----

MR. JUSTICE BELL: Let us do it in a sensible way, taking it in
the order of how events happened and then you can take Ms.
Hovi to the conclusion. I always find it easier to read
the beginning and middle before I read the end.

MR. MORRIS: OK. (To the witness) Before we embark upon the
detail, can you outline the public health considerations of
red meat production?
A. At the abattoir level, I assume you -----

Q. Focusing on the abattoir level, yes, the context in which
